Montecristo Rum is “agricultural rum” made from
all natural, hand-harvested, pure sugarcane juice, not molasses.
It is remarkably smooth, the result of Montecristo’s unique aging process, which uses American oak bourbon barrels.

MANUFACTURING
Montecristo Rum is a premium spirit obtained by distilling fermented sugarcane juice, a by-product of sugar. Montecristo Rum production begins with the harvesting of sugarcane. When harvesting time arrives, the stalks are cut close to the ground by hand with a sharp machete or with a cane-cutting machine. The leaves are removed in the fields and the stalks are transported to the distillery or sugar mill to be processed. The sugar-laden center pulps of the cane known as “bagasse” are crushed between rollers to extract the pure sugarcane juice.

Only the World's finest distillers masterfully blend and barrel age rum with pure sugarcane juice. This is the case with all Montecristo premium rums.

CATEGORIES OF RUM
Rum is either obtained from fresh fermented sugarcane juice, or the juice is extracted and boiled down to syrup. What remains after the crystals are removed is dark brown molasses.

When rum is obtained by distilling the fermented wash of sugarcane juice it is known as “rum agricole.” This process is rare and costly, reserved for limited production rums due to the multiple demands for sugarcane juice.

Rum obtained by fermented molasses, it is known as “rum industrial.” This method is more commonly used in high production rums. Distillers may have excellent production methods but not the ability to grow sugar. The molasses method allows for the International production of rum.

AGING
All newly distilled rums are aged to lose their rough edge. Montecristo Rum matures in American oak barrels once used for aging bourbon. Barrel aging imparts the natural color, spicy aroma and smoothness to a high quality spirit. Within a few years, what was once rough and fiery has become a smooth, mellow and palatable spirit.

Many rums use stainless steel which imports no flavor or color. These rums are usually used for the production of flavored rums like orange, lemon or spiced.

BLENDING
Rums are blended to achieve a variety of different tastes. As is done with blended Scotch production, combining rums from both pot and continuous-stills may create blends of precise flavor and texture. Such as the case of Montecristo 12 year aged Rum.

Aged rums are gaining appreciation among consumers of single malts, calvados, and of course bourbon whiskey. There is the recently popular Mojito and Hemingway’s famous Daiquiri. With the Cuba Libre and Mai Tai, rum is probably the Worlds greatest mixable spirit.
